4 Ways to Stay In Shape Over the Summer

Let’s be real. The summer is when we want to be looking our finest but it’s also the time that it’s the most fun to go out, eat, drink, and just be merry. That doesn’t always agree with our waistline and with bathing suits, lake drinking, and beach chilling are calling your name, you can’t afford to mess up your workout routine AND your diet.

I choose to follow something called IIFYM (If it fits your macros) and it’s been amazing for these months. It makes you feel just guilty enough to second guess what you’re about to put in your mouth, but it also lets you live your life at the same time while maintaining your goals.

Now if you plan on losing more, I recommend that you still chill with the wild eating habits we all feel on the weekends and stick to scheduled cheat meals, but if you’re just trying to maintain, you’ll love IIFYM (will post on this soon, I promise!) and these three easy ways that I try to stay in shape over these uber fun summer months.  

 

  • Beachbody On Demand—Before you go running the other direction, hear me out. This isn’t your typical box DVD set that costa $100+. I used to be a Beachbody coach and hated lugging those DVDs out of town with me (especially if I accidentally forgot one at a hotel). I used to hope and pray they would come out with a streaming program. Insert Beachbody On Demand. You have access to all the workouts that you have ever wanted to try (think P90X, Turbo Fire, Insanity, Focus T25 and SO much more) without having to pay for them individually.  You get meal plans, cooking shows from Autum Calabrese, recipes, workout calenders and so much more! It’s amazing because they charge you $99 but in three installments. Way less than gym membership right? All you need is a few dumbbells and if it’s just you working out, I recommend getting some adjustable ones like these from Bowflex.
  • Pinterest Workouts—What is Pinterest not good at? I’ll answer that…nothing. Whether you’re looking for essential oil recipes, healthy recipes, or wedding ideas, you’ll find what you’re looking for, guaranteed. You can also find some great workouts that require no equipment. Check out my workout board and follow it to stay connected to what workouts I try to do when I’m in a hotel with no weights and crappy cardio equipment. Try looking up ‘HIIT workouts’ or ‘no equipment workouts’.
  • Summer Activities—I love playing outside (minus the bugs, but I’ll put my essential oil recipe to handle that up soon). My fiancé calls me a sun baby because I love roasting in the sun and getting a nice golden glow. If you’re like me, activities like beach/sand volleyball, kayaking, snorkeling, biking, hiking, or swimming to get a great workout (you’ll probably be super sore and tired afterwards because they are SO different than traditional gym workouts!).  This is a great way to have fun with others who may not be so into working out but like outdoor activities as well. Great for parents and kids too!
  • The Fit Britt Accountability Program—I was contacted by a close friend to try to help her stay on track this summer because she was working out hard but not seeing the results she wanted. We started working as accountability partners and assuring that she still reaches her goals but can still have her drinks and treats when she wants. There’s no excuse to become a chunky monkey this summer! DIY All Natural Hand Soap

Never in my life did I think that  I would be a DIY person. I used to love buying stuff already made because it was easy and I was lazy. Well, maybe not lazy but “efficient”. But then one day…

…I found Young Living oils. They actually found me, but I fell in love about four years ago. I would use them to help with my wellness and I am happy to say that anyone in my home really doesn’t experience any chemicals (even my pups!) and I have not gotten sick (knock on wood) in quite some time. I love how they support my various systems and make me really good about the choices I make. You’ll read many other future posts on how I love living chemical free with Young Living products.

Ok, I’ll get off my soap box (ha. Ha.). You’re here for my DIY hand soap recipe yes? I love using this because I get to be in control of what goes on my body. This soap literally costs about $1 to make (minus the foaming hand pump which is about $4 for each) and you have enough ingredients to make a bunch of these for your house or for refills. You can choose to use whatever oils you like depending on the scents you like and whatever carrier oil you choose (I found jojoba oil easily at Target or Amazon and fractionated coconut oil on Amazon). Vegetable glycerin can be found on Amazon as well (are you a Prime member yet? LIFE CHANGING.) I choose to use Young Living Oils because of their quality and versatility. I can literally make ANYTHING I normally use at home (face wash, face lotion, hand soap, dish soap, cleaning spray, etc.)

DIY All Natural Hand Soap

½ cup castile soap

1 tsp fractionated coconut oil or jojoba oil

5 drops of Lavender Essential Oil (click here to get 24% off of a starter pack to get all of the oils I used in this recipe and so many more!)

5 drops of Lemon Essential Oil

5 drops of Tea Tree Essential Oil

5 drops of Purification Essential Oil

1 foaming hand soap bottle

1/2 tsp vegetable glycerin

Water

  • Pour castile soap into foaming hand soap bottle
  • Put essential oils into hand soap bottle. I recommend at least getting a total of 11 drops of oils so you can smell them and enjoy the benefits
  • Add the carrier oil (the jojoba oil or the fractionated coconut oil) to the hand soap bottle. This keeps your skin extra moist. Don’t you hate having to put lotion on right after you wash your hands because they’re so dry? This eliminates that need.
  • Add 1/2 tsp of vegetable glycerin.
  • Fill remainder of the hand soap bottle with water and voila! You’ll be smelling your hands all day after washing them with this!

See? Easier than you thought right? And because these bottles have so much in them, you are able to make so many of these and refill them in your house whenever you need to.

Healthy Breakfast Tacos

Raise your hand if you’re from Texas!!  Ok, ok it’s ok if you’re not but just know that we love us some breakfast tacos. My personal favorite is a gas station original that’s potato, egg, bean and cheese, otherwise known as a Q taco for my Valley folks. Best. Food. Ever. (Minus a Las Vegas Restaurant Enchilada, which I’ll totally post about when I go back to Texas one of these days).

But let’s get back to breakfast tacos. Who doesn’t love a good quick meal that satisfies every one of your taste buds for the first meal of the day? Exactly. I love those good ol’ Q tacos but they aren’t exactly friendly for the wasitline. That’s why I came up with this amazing taco recipe that will satisfy you, your significant other (that’s ok if it’s your dog, girl), and your guests. You can always swap the eggs for egg whites as well. Check it out below:

Healthy Breakfast Taco Recipe

Serves 2

4 corn tortillas (I prefer Mission because they are low in everything and taste authentic AF)

4 eggs

½ red bell pepper

½ onion

1 small avocado

1 lime, juiced

¼ tsp cumin

¼ tsp paprika

¼ tsp garlic salt

1 tbsp cilantro

1 tsp olive oil

Cooking spray

Pepper to taste

Optional: Cheese of your choice. I would pick either cotija (Mexican cheese) or feta cheese for best taste

  • Warm two skillets (if possible) to medium heat (that means level 5 for most of you)
  • Once one pan is heated up, add olive oil. Once warm, add peppers, onion, and seasoning to pan. Saute until soft (cover if needed).
  • In the other pan, spray cooking spray. Place corn tortilla in pan and warm for about 30 seconds each side. Place on plate until ready
  • Cut avocado and mash in a small bowl. Squeeze lime on the avocado to avoid browning. Divide on corn tortillas when finished.
  • Once vegetables start to soften and corn tortillas are ready, spray pan (the one that had the corn tortillas) with cooking spray. Remove vegetables from the pan and distribute on the four tortillas.
  • Crack either two or all four eggs into pan that previously held tortillas. Cook eggs until desired firmness (I prefer a little runny (over medium) because it just tastes so good with veggies). Place eggs on corn tortillas with mashed avocado and vegetables.
  • Divide cilantro and top each taco with a little. Serve immediately.

Such a great weekend recipe! Next time I make it I think I’ll roast some sweet potatoes with the seasoning or mash it. Try it out for yourself and let me know how it goes!

Skinny Pineapple Jalapeno Cilantro Margarita

Clearly you see I like margaritas right? I usually stick to craft cocktails and wine (mostly wine but I do love a good unique drink when I’m out on the town). A couple of weeks ago I decided that I really wanted a spicy drink and I said, “hey, jalapenos at the farmer’s market are only $1 for a bag and I have some tequila….”

Sooooo….it happened! The biggest part of this is not skimping on infusing the tequila. I had two experiments 1) where I infused the tequila for just about a day or so and 2) where I infused it for a week and used the same ingredients. Both yielded fabulous results but holy %^&$ I loved the one that was infused for a week! It was just the right amount of bite and I also set aside the remaining amount of juiced pineapple juice and froze it so I could use it this week. It gets to be skinny because I use my simple syrup recipe I mentioned before in my skinny mango margarita recipe.

So here it goes! Remember to try to do this a day in advance so you get the best bite for your buck!

Skinny Pineapple Jalapeno Cilantro Margarita

Serves 2

3 shots of jalepeno infused tequila

1 tbsp cilantro

1 fresh pineapple, juiced (if you can’t get this, just get as fresh of pineapple juice as you can, you’ll need about 4 shots of it; 2 per drink)

2 shots of skinny simple syrup

2 limes

  • Juice two limes, skinny simple syrup and add cilantro to the bottom of a shaker. Muddle together to release cilantro flavor
  • Pour pineapple juice, and tequila into shaker. Add ice and shake. Pour over ice or alone (blend if desired).
  • Serve immediately

So simple it should be a crime right? Even if you have to make the simple syrup it’s such a breeze! Such a refreshing summertime drink and I can’t wait to make more!

Skinny Simple Syrup

Everyone loves a good mixed drink but none of us love the calories it comes with. Simple syrup is an easy way to make your waistband expand, so I’ve been using a skinny version that I have used over the years and recently perfected with my use of Young Living Essential Oils Orange Oil (Here’s a link to save 24% on oils; post on how Young Living changed my life coming soon!).  This simple syrup can be refrigerated after cooled to use other times as well. I do a few different versions of this, including a blueberry simple syrup for my blueberry margarita that’s to die for! Check out this lovely recipe and let me know what you think!

Skinny Simple Syrup

1 cup water

1 cup Splenda/Truvia or any other zero calorie powdered sugar substitute

1-3 drops of Orange Young Living Essential Oil (click the link to get them at a 24% discount as a wholesaler! If you don’t have this and are making my Skinny Margarita, add some fresh squeezed orange juice to margarita)

  • Take pot and pour water into pot. Place on stove and bring to a rolling boil
  • Add sugar substitute slowly to the pot stirring to dissolve until you have poured all the sugar in.
  • Remove from heat and let it cool.

Bet you didn’t think it was that easy did you? Takes no more than about 5-10 minutes to do and once it’s cooled you can use it in recipes like my Perfect Skinny Mango Margarita recipe and other that are soon to come on the blog!

Breakfast Quiche for The Not-So-Morning-Person

As you probably realized in my first recipe post, I love me some breakfast.  I think it’s a meal that people tend to forget about until they have some time to make it on the weekend, but I make sure I get that meal in every day.  I used to get up early and make breakfast for my fiancé and I but I realllyyyyyyyy also like sleep, so I re-evaluated what I should be doing.

I remembered my days of meal prepping.  Back before I met John I was basically a 20 something obsessed with working out, sitting by the pool when the weather was good, and eating super healthy.  I still love those things but I was kind of crazy before and I’ve definitely have found a middle ground for myself by following IIFYM (If It Fits Your Macros, more on that in another post).

So with my new eating style of actually being a normal person and eating carbs (again, based on my macros) and my dire need for sleep and meal prep, I decided to do some digging around for a cool egg recipe I could make and modify to my liking.  I found a bunch, but the one that I have on this post is officially my favorite version I have perfected.  If you’re single, freeze/refrigerate these and pop them in the microwave/oven. They’ll be delicious even heated up later and should last you for the work week. If you’re in a relationship, he/she may want two for themselves so it may only last a couple of days.  Go crazy with the veggies if you don’t like the ones I picked, I promise I won’t get offended!

Egg Casserole-Breakfast for the week!

Makes 8 servings

Prep Time: 15 minutes

Cook Time: 45 minutes

1 13×9 pan

Olive Oil spray

1 tbsp olive oil

2 small sweet potatoes, shredded (1 large is fine, just make sure it covers the baking dish)

1 cup mushroom, chopped

1 onion, chopped

1 red pepper, chopped

1 cup spinach

1 tsp garlic salt

6 eggs

6 egg whites (liquid substitute is fine just remember 3tbsp = 1 egg)

6 strips of uncured turkey bacon (I like Plainville but you can use anything you’d like or you can choose to use chicken sausage and I like al Fresco and I would use 4 total)

¾ cup of shredded cheese of your choice (I prefer sharp)

  • Preheat oven to 400 degrees
  • Spray bottom of the pan with olive oil spray to make sure it does not stick
  • After shredding the sweet potato, take a cheese cloth (if your fancy, I either use a clean dishcloth or paper towels) and squeeze out some of the water that is naturally in the sweet potato. This will help the crust cook a bit faster
  • Line the bottom of the pan with the sweet potato. This will serve as your hash brown crust to give you those good carbs your body loves!
  • Bake sweet potato for 20 minutes.
  • While sweet potato is cooking in the oven, heat up a saucepan at medium high heat.
  • Once warm, add olive oil and chopped veggies. Add garlic salt and sauté until soft. Add in chopped chicken sausage/turkey bacon and heat through (most of these are somewhat cooked and will cook more in the oven)
  • Crack eggs and add egg whites to a bowl and whisk until yolks have been broken. Add sautéed veggies to the egg mix. Mix in shredded cheese.
  • Remove the sweet potato from the oven. I add a little olive oil/cooking spray just because I’m paranoid about it sticking and being a mess. Add egg mixture to the sweet potato and place back in oven.
  • Bake for 20-30 minutes based on oven. Cut into 8 squares once cooled and store for eating later or serve immediately!

Lazy Girl Ceviche

Memorial Day is coming up and if you’re anything like me, you’re terrified of going anywhere for all of the deliciousness that may derail your otherwise perfect diet (total sarcasm here but you know what I mean). I spent a lot of years as a lacto-ovo pescatarian (a person who gives up pork, chicken, turkey, and beef but loves seafood and eggs/dairy). It was a good 6 years (2008-2014) because I learned a lot about how to properly fuel my body. I learned how to cook which sparked a passion in me that I love to share with others.

Sometimes it was hard to come up with a variety of things to eat so that I wouldn’t get bored and turn to unhealthy fast food options (I pretty much don’t eat fast food minus places like Starbucks for breakfast when I’m on the road for work).  I turned to dear old Skinnytaste every moment I got because she had an index of a ton of recipes that were friendly to my diet.

Fast forward to 2017. I now eat chicken and turkey but still haven’t touched beef or pork in almost 10 years, but sometimes I catch myself still eating like a pescatarian, especially when I am out of town for work since it’s just me eating and I don’t have to worry about my fiancé getting tired of having seafood too often. I have fallen in love with a recipe from Skinnytaste that I have adapted over time to make it more Fit Britt flavored (love me some garlic salt!).

So below is my recipe for Lazy Girl Ceviche, a dish that will satisfy others and yourself (I have made this for friends and it was  HUGE hit).  Ceviche typically takes a few hours to make and is delicious, but I always run short on time doing this thing called “adulting” (yeah I know, lame right?). This is great to bring to a cook out or just to enjoy on a lazy summer afternoon. To eat it, you can be a creep like me and eat it without chips or with cucumbers (low carb, low calorie, and serving of veggies) or with my favorite Baked Ritz Crackers (Sour cream for me please!)

Lazy Girl  Ceviche (Modified from Skinnytaste Zesty Shrimp and Lime Salad)

Total Time: 15 minutes

1 bag of cooked (frozen or fresh) shrimp (12 or 16 ounces, your choice)

1 tomato

¼ cup of sweet white onion (about a quarter/half of a whole one)

2 limes juiced

1 avocado

½ tsp garlic salt

1 tsp olive oil

1 ½ tbsp cilantro

  1. Chop onion, juice limes, and add oil and garlic salt to a bowl. Set aside.
  2. Defrost shrimp if frozen and chop into bite size pieces. Set aside
  3. Chop tomato, avocado (careful not to smash avocado when doing this!)
  4. Add shrimp to onion mixture and mix. Add tomato and cilantro and stir that bad boy up. Lastly, add the avocado and carefully mix it as to not smash the avocado
  5. Eat until you’re content!

And that’s it! It’s just that easy and is an INSTANT party pleaser! Partner it up with my skinny margarita (featured later this week) and you’ll be on your way to being the fittest party girl you’ve ever seen! Enjoy!
